5 Easy and Delicious Chicken Dinners for Busy Weeknights

Busy weeknights are not when you feel like being creative on a really complicated meal.  Those meals are better saved for the weekends. 

Here are 5 tried and true chicken dinners – all you have to remember to do is thaw out the chicken.  (Actually, if you forget, three of the meals can use rotisserie chicken and there is always defrost on the microwave).

I’ve made this recipe over and over.  You can do like she suggests and cook the chicken breast halves.

However, if you are really pressed for time, you can also use a rotisserie chicken.  You just cut off the meat and jump to step 7 out of 8.  It isn’t quite as juicy as when you cook the chickens to use, however it still tastes good.

Buffalo Chicken Tenders – Emeals

These take next to no time to make and they are delicious.  I received this recipe through my Emeals subscription.

Balsamic Chicken and Orzo Salad by Rachel Ray

This is another recipe you will want to put on repeat.  It comes together quickly and it tastes light, fresh and yummy.  If you have picky eaters, you can skip the black olives.

Chicken and Noodles with a Rotisserie Chicken

Here is my super fast take on a recipe for Chicken and Noodles.  You need noodles like Essenhaus Extra Wide Noodles.

You also need a rotisserie chicken and a 32 oz. carton of chicken stock.  Heat up the chicken stock and cook the noodles for as long as directed. 

When there is about five minutes left, put the cut up chicken from the rotisserie chicken in the noodle/broth mixture.  Let it heat up and you are done! 

You can also use microwavable mashed potatoes if you are short on time.  A yummy comforting dinner for a busy weeknight!

Greek Chicken with Rice and Hummus

To have this dish ready in no time, you just need the following:

  • Rotisserie chicken
  • Pita pockets
  • Prepared hummus
  • Feta cheese
  • Chopped tomatoes
  • Chopped cucumbers
  • Chopped parsley
  • Prepared rice
  • Greek salad dressing

To assemble, take the chicken and shred it and add a little of the Greek salad dressing to give it a little more flavor.  Also, combine the rice with the chopped tomatoes, cucumbers and parsley. 

To eat, take the rice mixture and place it in the pita pockets with some of the chicken on top.  Serve with the hummus. 

Dip the chicken pitas in the hummus and sprinkle it all with feta cheese.  So easy and also delicious!
